We took our wonderful washed Ethiopia Ajere, a wonderful coffee on its own and put it in oak brandy barrels. The beans rested in the barrel for 25 days to let them soak with the wonderful oak-brandy aroma of the barrels.
The result is a melange of flavors - the powerful kick of the brandy-infused oak barrel that cuts through the fruity and juicy flavor of a superb Yirgacheffe coffee.
Roasted light, this coffee is best prepared as filter, but as with any experiment, you're welcome to play with any other brewing method (cold brew anyone?).
