This coffee comes from the Las Delicias farm, one of the most innovative farms under the Mierisch family umbrella. Also, the farm is home to a very special coffee variety: Javanica. It's actually a word game. JAVA (an Ethiopian variety) and NICA (because it's grown in Nicaragua). This special variety came to the Las Delicias farm by coincidence but it has turned out to be an amazing bean.
Now the farm also makes this coffee even more special by using a special low temperature fermentation process where the coffee is fermented without oxygen at low temperatures (6 – 8 degrees Celsius) creating a flavorful coffee with enhanced acidity and smooth sweetness. Oh and some crazy fruity flavors!
