We roast this coffee light and quick. This way we preserve the unique freshness and gentle silky body when brewed as filter. Grind much finer than usual for espresso and you will be rewarded with a stellar shot: silky body and unmatched elegance.

THE PROCESS:

The process starts with selective harvesting.Coffee cherries are hand picked at their peak ripeness, to ensure peak sweetness. The cherries are then transported to a wet mill, where only the best cherries are selected for further processing. First selection is in water tanks to remove any unripe or under-developed beans. Next, any remaining imperfections are removed by the skilled team. After the selection process, cherries are disinfected and oxidized for 24 hours. Next step is removing of the pulp and controlled 72-hour anaerobic fermentation process. The final step is washing the coffee clean and sun-drying for about 10 days, until optimum dryness is achieved.

 

THE PRODUCER:

Nestor Lasso is part of the young generation of coffee producers in Colombia who are shaping the world of specialty coffee with innovative methods in growing and processing coffee. In the Huila region, Nestor runs the El Diviso farm with his brother Adrian and their friend Jhoan Vergara. While self-taught in processing coffee, Nestor and Adrian were taught about traditional agriculture and the proper way of taking care of coffee trees by their father Jose, a seasoned coffee farmer.

Over the last few years Nestor, Adrian and Jhoan have transformed the farm completely with a sole focus: creation of high scoring microlots by using varietal separation and a range of innovative processing methods.
