Ethiopia Suke Quto

Ethiopia Suke Quto

Our favorite washed Ethiopian coffee is back!

Suke Quto was one of our OG's in the coffee line up: it's sweet, it's delicate, it's everything a coffee lover looks for in their daily filter coffee. But this coffee is so good that when green coffee is offered, it is immediately sold out!

For this year's crop, we were prepared. And as soon as our sourcing partner Trabocca let us know that this coffee was available, we reserved four bags. And here it is, Tesfaye Bekele's Suke Quto. We believe that this is the one of the best washed coffees that Ethiopia has to offer.

We roast this coffee light with slightly extended roast time  -  especially well suited for filter and cold brew.

FILTER:

Coffee: 20 g
Water: 300g
(Coffee-to-water ratio 1:15)
Time: 2:45
Water Temperature: 94°C (201°F)
Grind: Medium (appr. 650 μm)

Tips for Filter coffee:
- Finer grind = longer brew time, fuller and more intense flavor.
- Coarser grind = shorter brew time, lighter and more delicate flavor.

- Lower coffee-to-water ratio (more coffee, less water) = fuller and more intense flavor.
- Higher coffee-to-water ratio (less coffee, more water) = more delicate and balanced flavor.

- Higher temperature (95–96°C) = more sweetness, more body.
- Lower temperature (90–93°C) = less bitterness, more acidity.

COLD BREW:

Coffee: 50 g
Water: 600g
(Coffee-to-water ratio 1:12)
Time: 8-12h (room temperature) or 18-24h (refrigerated)
Grind: Coarse (1000 - 1400 μm)

For cold brew concentrate use 1:7 coffee-to-water ratio.

We must confess - we love coffees from the Guji region. And even more, we love coffees from the Suke Quto washing station. The Guji region is, in our opinion, becoming one of the best coffee regions in Ethiopia and we have one man to thank - Mr. Tesfaye Bekele, owner of the Suke Quto washing station and the man who brought coffee in the region. We don’t know what magic trick Tesfaye pulled off with his 278 outgrowers, but there is only one word that can describe this coffee - FABULOUS! But it’s not just the flavor and overall quality of this coffee ... we are proud to say that this coffee is 100% traceable, all the way to the growers.
