Colombia Finca Las Flores | Tabi

Floral, Exotic, and Exquisitely Clean

If you are looking for a coffee that feels like a masterclass in precision, this is the one. Produced by brothers Diego and Jhoan Vergara at their renowned Finca Las Flores, this Tabi variety is a rare gem that balances the elegance of its ancestors (Bourbon and Typica) with modern, experimental craftsmanship.

What it tastes like: A crystal-clear flavor profile that defines "exotic." Thanks to a meticulous washed experimental process, you can expect a bouquet of jasmine-like florals, bright citrus notes, and a silky, tea-like body. It is incredibly clean and vibrant, leaving a crisp, sweet finish that lingers on the palate.

Why we love it: It is a celebration of the Tabi variety—developed in Colombia to be resilient but prized for its exceptional cup quality. The Vergara brothers are pioneers of fermentation, and their "experimental" touch on this washed lot enhances the natural complexity of the beans without overwhelming the terroir. It’s technical perfection in a bag.

Best way to drink it: Lightly roasted to preserve its delicate aromatics, this coffee is an absolute superstar as a Pour-over (using GINA or a V60). It is the perfect choice for those who want to experience the "bright and floral" side of Colombian specialty coffee.

Roasted light, bright, and built to shine as a black coffee.
While we recommend skipping the milk (its vibrant acidity doesn't play well with dairy), don't feel restricted to the pour-over. Whether it’s Espresso, Moka Pot, AeroPress, or anything in between, this roast is all about clarity. We keep it light to protect the bean’s natural sweetness and origin character, giving you a cup that is clean, expressive, and unapologetically bold.

Grown at 1750 meters in the hills of Acevedo, Huila, the Colombia Washed Tabi is a masterclass in modern coffee innovation. It is defined by a bright, fruit-forward berry profile—a clean "symphony" of flavors that highlights the precision of its processing.

The journey begins with cherries harvested at a semi-ripe stage, a specific choice made to curb heavy fermentation notes and let the bean’s natural character shine. What follows is a highly technical fermentation sequence involving oxidation and thermal shock. By quenching the coffee with a rapid transition from hot to cold water, the Vergara brothers abruptly stop microbial activity, effectively "locking in" the volatile aromatic compounds created during fermentation.

The process concludes with high-tech precision drying. Instead of traditional patio drying, the beans are placed in a hermetically sealed stainless-steel dehumidifier. This controlled environment ensures the coffee reaches its optimal moisture content while perfectly preserving its fragrance and complex taste profile. The result is a cup of unparalleled clarity and sensory depth.
