Huila, the Colombia Washed Tabi is a masterclass in modern coffee
innovation. It is defined by a bright, fruit-forward berry profile—a
clean "symphony" of flavors that highlights the precision of its
processing.

The journey begins with cherries harvested at a
semi-ripe stage, a specific choice made to curb heavy fermentation
notes and let the bean’s natural character shine. What follows is a
highly technical fermentation sequence involving oxidation and thermal shock.
By quenching the coffee with a rapid transition from hot to cold water,
the Vergara brothers abruptly stop microbial activity, effectively
"locking in" the volatile aromatic compounds created during
fermentation.

The process concludes with high-tech precision
drying. Instead of traditional patio drying, the beans are placed in a
hermetically sealed stainless-steel dehumidifier. This controlled
environment ensures the coffee reaches its optimal moisture content
while perfectly preserving its fragrance and complex taste profile. The result is a cup of unparalleled clarity and sensory depth.
